Terada Honke has taken its historic way of making sake one step further by reinstating the tradition of the long maturation of sake. All other elements are natural and pre-modern, organic rice, self-cultivated koi, natural yeast, and extremely slow brew Kimoto yeast starter.

Aged in its bottle at the brewery until release, this is a beautiful expression of Koshu. Incredibly complex with a malt and toffee character. The palate has bold acidity with a long grippy finish. Drink at room temperature or slightly warm.
