Same hands-off approach as everything else from Christine Pieroth — wild yeasts, no fining, no filtration, nothing added or removed. Dornfelder is a grape that delivers colour and dark fruit naturally, which makes it an ideal candidate for a pét-nat rosé with a bit more personality than the pale pink norm. Bottled mid-fermentation to capture the bubbles, kept at 10.5% to stay light and fresh.
