‘Kioke’ means wooden, and on the label, it says ‘Kioke Jikomi’ or ‘Wood Ferment’. This refers to the Sake being fermented in an open-top wood fermenter (made from Japanese cedar). It spends the fermentation time purely in wood and then is aged for the remainder of the bottle. Consider it a new version of old-school Sake, with a gentle nose made up of dry cedar, cinnamon, chestnuts and pepper. Drink at all temperatures. Store dark and cool.
