Singulier Trousseau 2019
This is a blend of Tissot's Trousseau from six separate Arbois terroirs, all owned by Stephane and farmed bio-dynamically. The fruit is destemmed by hand and matured in small barrels for one year following four weeks of maceration. Only the merest smidge of sulphur is added. Generous, spicy, and more dark-fruited than may be expected. Plenty of density and faintly rustic tannin.
