Carricante with Grecanico, Minella and Cattarato from 50-80-year-old vines, destemmed and directly pressed where it stays in the press with CO2 to protect the fruit. The juice from the pressing and the 'free run' are fermented separately in steel, then blended again later. Unfiltered and low in sulphur. A wonderful wine that is unmistakably Etna: smoky, toasted and gritty with plenty of salt on the finish. Give it some time in the decanter to really open up.
