Carpe Diem 2018
Guy Boissard's Grand Cru, comprised of 100% Melon de Bourgogne (Muscadet). The wine spends 18 months in clay amphora, listening to the subtle vibrations of Chanting Monk music (Guy insists this helps). After it's year-long sound-bath, it spends a year ageing in the bottle. This is a real food wine, which pairs beautifully with St Jacques or Lobster....or Caviar if you're feeling fancy.
