20% Cinsault and 80% Grenache. Hand-harvested grapes. Three methods are used to ferment the Grenache: 1/3 direct press, 1/3 destemmed, and 1/3 brief carbonic maceration. Destemming and low-temperature fermentation are performed on the Cinsault. The juice is aged in stainless steel for four to five months before being mixed for the winter. Unfiltered, unfined, and SO2-free bottles.
