Alice & Olivier De Moors production is minuscule and very highly sought after. Their ‘Sans Bruit’ cuvée is a unique blend of Sauvignon Blanc and Sauvignon Gris, which has too much residual sugar to suit the appellation (the limit is 4 g/l) so they call it Sans Bruit instead. From an old plot planted in the 1950s, harvested by hand. The fruit gently pressed and fermented spontaneously with indigenous yeasts in stainless steel tanks. The wine goes through malo naturally and is aged on without stirring of the lees, in amphora, old demi-muid and old barrique. We would liken this to drinking a late harvest Mosel Riesling owing to its 20g/l residual sugar and 14% alcohol.
