Joan Rubio, a Natural Wine producer, launched his own project in 2015 on family-owned vineyards in Catalonia, Spain, after 15 years at Recaredo, where he rose to Technical Director and introduced biodynamic practices.
The family estate covers 9 hectares in Penedès, Catalonia. The winemaking process involves complete de-stemming, followed by a 12-day maceration in uncovered stainless steel tanks. Alcoholic fermentation is completed in 500-liter barrels using indigenous yeasts.
The wine is aged for 5 weeks in red ceramic amphoras and an additional 6 months in stainless steel tanks, with no sulfites added. It stands out as one of the finest expressions of Xarel·lo from the region, showcasing its purity and character.
