This natural sparkling wine, crafted using the ancestral method, comes from hand-harvested grapes with perfect skin maturation to avoid harsh vegetal notes. After cooling the grapes overnight, a portion undergoes skin maceration for several days to capture its aromatic richness. The must is fermented with indigenous yeasts, and the wine is bottled with 20 g/l of residual sugar to complete fermentation in the bottle. No additional sugars or must are added, and the wine is left to age for several months on the lees. With its delicate bubbles and light structure, this youthful sparkling wine showcases vibrant freshness, balanced acidity, and subtle earthy tones from its clay soils.
