Jordi Esteve farms forgotten old-vine parcels in Rabós d'Empordà on slate soils — one of the few places in Catalunya where you find this kind of mineral-rich, low-yielding terroir outside of Priorat. The Sarau is 70% Carignan, 30% Grenache, destemmed and hand-harvested, with 13 days of skin maceration and daily hand pigeage before pressing into a mix of stainless steel and old oak barrels. Blended after four months, bottled unfined and unfiltered.
Sarau means celebration in Catalan. It earns the name.
