La Seca is Rueda country — the heartland of fresh, aromatic Verdejo. Elisa and Rubén planted their flag here with Viura instead, a variety more associated with white Rioja, from 70-year-old bush-trained vines on stony red clay soils at 850 metres. Hand-harvested in early September, fermented spontaneously in stainless steel with indigenous yeasts, then moved into a Flextank concrete egg where it spends 24 months on its full lees. The egg’s oval shape keeps the lees in constant gentle movement, building texture and complexity without adding flavour. Cold stabilised, 1,500 bottles made.
