Tom Lubbe grew up in New Zealand, made wine in South Africa, landed a three-month internship at Domaine Gauby in Calce, met Gérard's sister Nathalie, stayed, and started Domaine Matassa in their living room in 2003. Since then he's become a cult figure in natural wine — working old dry-farmed vines of indigenous Catalan varieties at 450 metres on schist and marl, farming biodynamically, and adding zero sulphur since 2015. The Blanc is 70% Grenache Gris, 30% Macabeu — some direct-pressed, some on skins — aged in large neutral foudres. No fining, no filtration, no additions.
The schist soils make their presence felt from the first sip.
Tasting Notes
Aroma: citrus peel, apricot skin, wild herbs, chamomile, wet stone
Palate: taut, saline, orchard fruit with fine phenolic grip
Texture: textured, electric acidity, long and precise
Finish: mineral, persistent, and wildly expressive
Serve lightly chilled. Give it time in the glass.
