Crafted from a blend of Macabeu and Muscat, these vines thrive at approximately 600 meters, rooted in limestone enriched with high iron content. Post spontaneous fermentation and meticulous destemming, the Olla Blanc 2022 undergoes a period of maturation on its lees within small concrete tanks (2,000l). As with all natural wines at Matassa, there's a steadfast commitment to eschew sulfur or additional additives. Instead, the spotlight is on the biodynamic practices in the vineyard, executed with precision. The result?
