Periklis and Stergios Tatsis have been farming biodynamically in Goumenissa since 2002 — Greece's first certified organic estate, now Demeter certified. Known primarily for their structured reds, they experiment constantly with their white varieties: long macerations, indigenous yeasts, no commercial additions, minimal sulphites. The Grammada White blends Malagouzia's aromatic richness with Roditis's freshness, Assyrtiko's mineral tension, and Xinomavro vinified as a white for body and depth. The result is golden and slightly hazy, with a textured, fruit-forward character that feels distinctly Greek.
