Alessandro Viola farms clay soils at 250 metres near Alcamo, halfway between Trapani and Palermo, where sea breezes off the Tyrrhenian keep things cooler than you'd expect for Sicily. The grapes are direct-pressed, fermented with native yeasts in stainless steel, and left on lees for around six months before bottling without fining or filtration. Sulphites, if used at all, appear only in trace amounts.
The result is a Grillo that feels honest and precise — not tropical or overripe, just clean, textured, and genuinely refreshing.
