Theresa and Bernhard Liszt farm their biodynamic vineyards around Leithaprodersdorf by hand — everything done slowly, carefully, and without shortcuts. The Optimiszt Blanc pairs Pinot Blanc's round, aromatic character with the freshness and mineral drive of Grüner Veltliner. Fermented together in a 1,000-litre old oak barrel, bottled as a pét-nat to capture the natural bubbles, then disgorged without additions of any kind. No fining, no filtration, only the naturally occurring sulphites from fermentation itself.
