Where the Malvasia de Sitges vinegar is floral and delicate, this one goes in a different direction. Samsó — the Catalan name for Carignan — brings darker fruit, earth, and a firmer backbone. Same process: centenary lees, must added for balance, barrel-aged to depth. The result is a vinegar with grip and character, something closer to a great aged red wine vinegar than anything you'd find on a supermarket shelf.
Use over red meat, roasted root vegetables, lentils, hard cheese, or anywhere you'd reach for something with more presence than a standard wine vinegar.
