Sumoll is a rustic, almost forgotten red grape that Josep Maria has been quietly championing at Finca Mas Perdut. Here it becomes a vinegar aged in ceramic amphora rather than barrel — a choice that preserves freshness and lets the grape's character stay front and centre without the added weight of oak. Same centenary lees base, same must for balance, but the result is noticeably lighter and more aromatic than the Samsó.
Use over fresh salads, grilled vegetables, charcuterie, goat's cheese, or anywhere you want acidity with a lighter touch.
