Julie and Toby Bainbridge farm organically with biodynamic principles in Chavagnes-les-Eaux. Grolleau is mostly known as the base for Rosé d'Anjou, but in its grey-skinned mutation it makes something altogether different — an expressive, textured white with real personality. Fermented in fiberglass on iron-rich, black schist soils, unfiltered and unfussy.
