Trouillot 2022 comes from 50+ year-old vines in the limestone-rich Lias marl soils of Poligny, where Yves Roy is crafting pure, unfiltered expressions of his terroir. Fermented and aged for 8 months in fiberglass, the wine captures the phenolic depth of old vines alongside a striking salinity and precision.
No sulfur, no filtration, no intervention—just raw Jura energy. Bright, mineral-driven, and structured, this Chardonnay pairs effortlessly with roast white meats, creamy sauces, or funky cheeses. A compelling new-school Jura project worth following.
