Joan Rubió spent years as technical director at Recaredo before stepping out on his own under the Tiques label, bringing with him a deep knowledge of biodynamic farming and a singular focus on Xarel·lo. The Deix is his most distinctive expression of the variety: grapes crushed and only the first free-run juice kept, then 11 days of skin maceration before fermentation with indigenous yeasts in stainless steel. From there, 6 months ageing under a layer of flor in 500-litre oak barrels — the same technique used in Jerez, here applied to Catalan Xarel·lo. The result sits somewhere between a mineral white and a fino, without being either.
