Elisa de Frutos and Rubén Salamanca farm their 70-year-old bush-trained Garnacha vines near Cuéllar in Segovia without chemicals or herbicides, tending the vineyard with biodynamic preparations. The MC is pure carbonic maceration — whole clusters, stalks included, fermented with indigenous yeasts in stainless steel, no malolactic, bottled early to lock in the fruit. The result is exactly what they were after: bright, lively, and loaded with red berry character.
For us, MC stands for the Morgon of Cuéllar. Serve it cool and drink it freely.
