Joan Rubió's Essencial comprises 100% Xarello from three tiny vineyards with chalky soils. Following hand harvest, the grapes are entirely destemmed, macerated on their skins for 11 days in stainless steel, then transferred to barriques for six months, following a further six months in stainless steel. We love this wine—an absolute joy to drink.
