Timorasso comes from old vines; San Leto undergoes three days of maceration without any pump-overs to not extract any bitterness from the skins. The wine is aged in untoasted acacia barrels for a minimum of twelve months, rendering a brilliant snapshot of one of Italy’s most intriguing white varietals. Daniele Ricci maintains Timorasso’s prominent acidity and mineral qualities while hinting at more nuanced flavours of kumquat, orange, and thyme. A store favourite every year.
