100% Zibibbo from 60-year-old bush vines on the volcanic island of Pantelleria — 7 months on skins in terracotta amphorae buried in the tuff, zero additions, zero filtration. One of the most uncompromising natural wines made anywhere in the Mediterranean.
Zibibbo • Pantelleria • 7 months skin contact • Buried amphora
Gabrio Bini was an architect in Milan. He fell in love with Pantelleria in the 1990s, moved there, started growing capers, then turned to wine. Now he and his son Giotto tend 5 hectares of old bush vines biodynamically by hand and horse on volcanic tuff soils at high elevation — closer to Tunisia than to Sicily. The Serragghia Bianco is the most iconic wine in the range: 60-year-old Zibibbo, destemmed, left to ferment spontaneously and macerate for 7 months in terracotta dolia buried in the vineyard to keep temperatures cool. Bottled without fining, filtration, or any sulphur additions. A technique Gabrio refined after studying Georgian traditions alongside Pierre Overnoy.
The wine evolves dramatically in the glass. Open it, leave it, come back.
