Mammouth Italien 2016 by Tony Bornard is a striking orange wine from the Jura, where tradition meets bold experimentation. Crafted from old-vine Savagnin, the grapes were macerated on their skins for several months in a large Italian terracotta amphora, then gently pressed and returned to the amphora for further aging.
The wine is unfiltered, made with minimal intervention and no added sulphur, allowing the raw character of the terroir and the vine to shine.
In the glass, it shows a rich amber-gold colour with subtle orange hints. On the nose: stewed orchard fruits, dried hay, chalky minerality, wax, and a faint oxidative edge. The palate is textured and deep, with fine tannins from skin contact, lively acidity, and a long finish carrying notes of lemon peel, almond, and saline mineral drift.
