Tamagawa Kimoto 2020 is brewed using the traditional kimoto method, a slower, more labour-intensive process that builds depth and structure. Made with organic rice grown to support the local stork population, it carries both a sense of place and purpose.
Aged for four years, the sake develops a rounder, more integrated profile, with gentle woody notes and a deep, savoury backbone. Despite its richness, it remains balanced and easy to pair across a wide range of dishes.
