Xinomavro is one of Greece's most serious red grapes — high acid, firm tannin, built for ageing. As a rosé it becomes something else entirely: the acidity stays, the structure softens, and the fruit comes forward. Periklis and Stergios ferment in stainless steel and leave it on lees for a few months before bottling, giving it a subtle richness and texture that lifts it well above a summer pour.

Not a pale pink. Not a beach wine. Something with a bit more going on.
