Tot d'Una means "all at once" in Catalan — and that's exactly what this is. Jordi Esteve picks all three Grenache varieties from his old slate-soil vines in Rabós and co-ferments them together rather than blending after the fact. Thirty-six hours of skin maceration, gentle pressing, spontaneous fermentation in stainless steel with native yeasts, one racking, then bottled unfiltered and unfined. The result sits somewhere between a deep rosé and a light orange wine — waxy, textured, and savourily complex in a way that pale rosés simply aren't.
