Tom Lubbe founded Domaine Matassa in Calce in 2003 after years working alongside Gérard Gauby — and has spent two decades proving what old Carignan at altitude can do in the right hands. The Rouge comes from a single parcel of 120-year-old vines on marl terraces at 700 metres, biodynamically farmed with yields around 15 hectolitres per hectare. A mix of Carignan, Grey Carignan, and White Carignan all co-harvested together, short maceration with some whole bunches, 10 months in neutral 500-litre barrels, bottled without fining, filtration, or sulphur additions.

Palate: juicy, lifted, earthy depth from the old vines
