Patrick Bouju trained as a chemical engineer, developed a sulphite allergy, discovered natural wine during military service, and never looked back. He and Justine Loiseau farm 9 hectares of their own vines in the Puy-de-Dôme and source from trusted grower friends across France for their négociant range. The Pd'A — Pineau d'Aunis — comes from Loire friends: destemmed grapes, 6-day maceration, hands-off vinification. The pepper and spice that define Pineau d'Aunis are present, but Bouju pulls the fruit right to the front.
Best served slightly chilled. Hard to stop at one glass.
