Dominik Held grew up in a winemaking family and went his own way — studying at Geisenheim, interning with Andreas Gsellmann in Burgenland, and returning home to vinify a few hectares of family land on his own terms. This Riesling comes from a cool west-facing slope on loess and sand soils, where a constant westerly wind slows ripening and keeps the acidity alive. Late-harvested for full ripeness at low alcohol, fermented spontaneously in used 500-litre oak barrels, aged six months in barrel then rested in stainless steel before bottling unfiltered. Dominik wrote his thesis on this exact vineyard at Geisenheim — he counted 23 different yeasts at work during fermentation. The number is on the bottle.
Tasting Notes
Aroma: citrus zest, white peach, wet stone, subtle reductive edge
Palate: fresh, vibrant acidity, stone fruit, fine mineral thread
Texture: slightly cloudy, lively, with a gentle lees texture
Finish: clean, long, and saline
