After spending 15 years at Recaredo, rising to the position of Technical Director and introducing biodynamic principles, natural wine producer Joan Rubió embarked on his own venture in 2015, cultivating family vineyards in Catalonia, Spain.
The family estate covers 9 hectares and is situated in Penedès, Catalonia.
The wine undergoes a 5-day maceration in stainless steel tanks, followed by 4 months of aging in white ceramic amphorae and an additional 6 months in stainless steel tanks.
It offers an elegant mouthfeel with captivating notes of lemon yogurt and orange blossom, complemented by a saline finesse.
Fewer than 1,000 bottles are produced.
