After harvest, the grapes undergo a 36-hour skin maceration before being gently pressed and co-fermented in stainless steel with native yeasts. The wine experiences just one racking before being bottled unfiltered and unfined. Rich notes of beeswax, stewed rhubarb, dried orange, and red cherry are complemented by hints of dried herbs and cedar on the palate. The texture is waxy and woody, with a savory depth that lingers elegantly.
