This elegant sparkling wine from Cincinnato is made from Bellone, an ancient Italian grape grown on the volcanic soils around Cori. Harvested early to preserve natural acidity, the grapes are gently crushed, given short skin contact, and fermented in stainless steel. A second fermentation via the Charmat method creates a refined, persistent mousse, followed by at least four months of bottle aging.
The style is crisp and pure, with a Brut dosage that keeps everything clean and precise. Soft yet lively, it’s a beautifully balanced sparkling wine that shines as an aperitif.
