Dimitri Pintar farms 10 hectares of organic vineyards on the rolling marl and sandstone hills around Cividale del Friuli, sheltered from the cold northern winds off the Julian Alps. The Ramato Sauvage is harvested in two batches: 30% whole-cluster, manually crushed in an open wooden container to start spontaneous fermentation as a pied-de-cuve; the remaining 70% destemmed and added 10 days later. The must then ferments and rests on its natural lees for 10 months in cement vats. Bottled unfined and unfiltered. 1,350 bottles made.
