This Assyrtiko is as natural as it gets. Wild-fermented and unfiltered, it spends 5 days on the skins for that extra depth, then chills for 3 months on the lees. It’s aged in acacia casks for 3 months and takes its time—another 7 months aging—before it's released. Just a touch of sulphites right before bottling, keeping it as pure as possible. If you're into minimal-intervention wines with serious character, this one’s for you.
