Bruno Levi Della Vida makes wine under the Nonner label on the south shore of Lake Bolsena in northern Lazio, in the volcanic Etruscan hills around Capodimonte. Grechetto Rosso is one of Italy's most obscure and endangered red varieties — once grown only in the province of Viterbo, now barely found anywhere. The Chica is Bruno's first red: four days of skin contact with 30% whole bunches layered in fiberglass alongside the pressed grapes, fermented spontaneously, then aged 12 months in wood. Aromatic, well-balanced, and with enough colour and length to stand on its own.
