Made from Spergola, an indigenous grape variety of Emilia-Romagna, the wine undergoes 12 days of skin contact in concrete tanks, followed by spontaneous fermentation with native yeasts and no additions. The result is a textured, complex orange wine that feels both ancient and modern — a nod to how the Romans might have enjoyed their wine.
