Post spontaneous fermentation and meticulous destemming, the Olla Blanc 2022 undergoes a period of maturation on its lees within small concrete tanks (2,000l). As with all natural wines at Matassa, there's a steadfast commitment to eschew sulfur or additional additives. Instead, the spotlight is on the biodynamic practices in the vineyard, executed with precision. The result?
