Theresa and Bernhard Liszt farm their biodynamic vineyards around Leithaprodersdorf by hand — everything done slowly, carefully, and without shortcuts. The Optimiszt is their most playful cuvée, and intentionally so. 100% Pinot Noir fermented in a 1,000-litre old oak barrel, bottled as a pét-nat to capture the natural bubbles, then disgorged without additions of any kind. No fining, no filtration, only the naturally occurring sulphites from fermentation itself.
