Tripolar 2022 is a unique natural dessert wine from Ràbos, Empordà, crafted by Rim Vins i Vinyes—winemaker Jordi Esteve (RIM). Made exclusively from Muscat grapes grown organically on rocky slate soils, this wine showcases an intricate winemaking process involving three different harvests:
- First Harvest: Pressed, and the juice is boiled.
- Second Harvest: Picked and Sun-dried for five weeks.
- Last Harvest: Late-harvested grapes added to the mix
Each batch undergoes spontaneous fermentation separately before being blended together. Additionally, 10% of the wine spends one year in an old rancio wine barrel. Unfiltered and unfined, Tripolar captures the essence of its terroir and meticulous craftsmanship.
