Francis Boulard has been farming biodynamically in the Massif de Saint-Thierry long before it was fashionable, now alongside his daughter Delphine. Les Murgiers comes from certified organic plots in Cuchery and Belval-sous-Châtillon — two right-bank Marne villages where silty clay-limestone soils strongly favour Pinot Meunier. Hand-harvested at high ripeness, first-press juice only, fermented spontaneously with indigenous yeasts in old oak barrels of varying sizes. Aged on lees with periodic bâtonnage, no fining, minimal sulphur, zero dosage.
