Fond Cyprès is Laetitia Ourliac and Rodolphe Gianesini's domaine in Escales, at the northern edge of the Corbières AOC. This Chardonnay comes from a certified organic plot farmed by their neighbour — hand-harvested, directly pressed, fermented with native yeasts, and aged on lees for around nine months before bottling unfiltered. The blue marl and calcareous soils keep things cool and mineral despite the southern latitude.
The kind of white that works as well in the sun as it does at the table.
