Periklis and Stergios Tatsis are third-generation winemakers whose family settled in Goumenissa after the 1924 population exchanges from Eastern Rumelia. They took over the domaine from their father in 1996 and transformed it into Greece's first certified organic, and later Demeter biodynamic, estate. No commercial yeasts, no enzymes, minimal sulphites. The Grammada blends Xinomavro — Goumenissa's sharp, Nebbiolo-like backbone grape — with Negoska, a rare local variety that softens the tannins and adds body. Aged patiently in the cellar without rush, released only when ready.
