Hanatomoe is made using the historic bodaimoto method from Nara, one of the oldest sake brewing techniques. No added yeast, unpasteurised, unfiltered, and undiluted, the sake develops naturally, resulting in a more open and untamed profile.
Young in style, it carries a mix of freshness and light funk, with floral aromatics and a gentle, living character. A sake that feels closer to the world of natural wine, with energy and variation in the glass.
