Kamitaka is brewed using the Mizumoto method, a traditional technique dating back to the 14th century. This slow, natural fermentation builds a sake that feels lighter and more lifted than expected, with a fine balance between sweetness and acidity.

Despite its historical roots, the result is remarkably clean and modern in feel. A sake that leans into precision and restraint rather than intensity, showing more with each sip.
