Jean-François Mérieau farms clay-limestone soils near Montrichard, south-southeast facing on the left bank of the Cher. The grapes are harvested at night to lock in freshness, pneumatically pressed, settled for 48 hours, then fermented with indigenous yeasts on lees. The result is a Sauvignon that leans into citrus and mineral tension rather than the more obvious tropical side of the grape — with a subtle bitter edge that keeps it lively to the last sip.
