Thierry and Pascal Julien have been farming organically at Mas de Janiny since the late 1980s — one of the earliest commitments to organic viticulture in a region that was then producing mostly cheap bulk wine. Their 95 certified hectares sit in the hills around Saint-Bauzille-de-la-Sylve, on limestone, clay, and schist soils between 130 and 180 metres, cooled by Mediterranean sea breezes. The Tibo Blanc is a pure Chardonnay made without any additions, using only native yeasts. Delicate and fresh, with peach and hazelnut drifting in and out.
Good as an aperitif, good with grilled fish and goat's cheese, good with nothing at all.
